NUT MINCE TACOS WITH AVOCADO & FETA SMASH & APPLE SALSA

75g almonds
75g walnuts
50g sundried tomatoes, chopped
½ teaspoon cocoa powder
1 teaspoon apple cider vinegar
1 teaspoon soy sauce
1 teaspoon cumin seeds, toasted, ground
1 teaspoon coriander seeds, toasted, ground
1 teaspoon dried oregano
½ teaspoon smoked paprika
1 clove garlic, crushed
1 teaspoon lime juice, plus 4 tablespoons extra
1 apple, cored, finely cubed
½ cup coriander leaves, finely chopped
½ small red onion, finely chopped
1 avocado
50g feta, crumbled
tortillas and lime wedges to serve

Method:

Put the almonds in a food processor and pulse until coarsely chopped. Add the walnuts, sundried tomatoes, cocoa, vinegar, soy sauce, cumin, coriander, oregano, paprika, garlic and 1 teaspoon of lime juice and process until combined. Put into a serving bowl and set aside.

Put the apple, coriander leaves and half the onion in a bowl. Pour over 2 tablespoons of the lime juice and mix well. Set aside.

Mash the avocado with a fork, then mix in the feta, remaining onion and remaining lime juice. Season with salt and freshly ground black pepper. Serve the nut mince, apple salsa and avocado smash with tortillas and lime wedges.
